Caviar has always been a favorite of ours, but can be intimidating to purchase and eat at home. The Hackelback and Paddlefish were delicious and luxurious yet extremely versatile. My favorite easy way to eat is on a Ruffle potato chip with creme fraiche or a little more fancy is on top of a lobster deviled egg. HIGHLY recommend for a wonderful treat!]]></description>

					<description><![CDATA[My  daughter just called me to  say that she was in Beverly Hills at a “very  important Party”, given by her friend whose husband is a movie director.  And they had the most fabulous Caviar that they got from this place in Tennessee. I  asked her the name and she told me it was Kelley’s Katch and I told her that is what she has eaten for all the past years she has eaten it at home, because that’s what we have been buying for at least 20 years.  I just sent to her again for her birthday, like every year.   It’s what I give my extra special clients for the Holidays.

A true Sturgeon, the Hackleback is America&#039;s own contribution to the world of fine caviars - when it is done right. Kelley&#039;s is done perfectly. Dark black, glossy roe, perfectly graded and lightly salted. The Hackleback is only a little more expensive that the Paddlefish so I can still wolf it down with shameful abandon. I love them both. The Hackleback comes very close to black Sevruga at a fraction of the price. Kelley&#039;s offering is now complete in my book, White Sturgeon, Hackleback and Paddlefish. 					<description><![CDATA[I like Paddlefish caviar because it has flavor and mouth-feel that are very much like sturgeon caviars. I just tried Kelley&#039;s Katch product and I&#039;m ecstatic! This is true malossol (little salt), beautifully graded and clean, very fresh and very attractively priced.  In my opinion you&#039;re not enjoying caviar in the highest way if you have to mete out tiny dollops and amend the roe with all kinds of garnishes. Dive in and indulge yourself! This caviar allows me to do that. I&#039;ll be back soon!]]></description>
