Attached is a picture from an annual family event we refer to as the “Caviar Riot.” It has become a family tradition and it’s one of our favorites. We would not be able to afford this if it were not for Kelley’s Katch.
The last event was a do-it-yourself experience which included
- Potato pancakes
- Miniature new potatoes
- Toast points
- Buckwheat Blinis
- Sliced Baguettes
- Smoked salmon
- Crème Fraiche
- Red onion
- Chopped Egg
- Champagne
Every combination is a little different, that’s what makes it a riot. While this is not a recipe, it is a great experience.

INGREDIENTS
- Raw Oysters
- Caviar
- Crème Fraiche
- Fresh Lemon Juice
- Red Onion
STEPS
- Chill Oysters.
- Dice red onions finely.
- Open Oysters.
- Spread a thin layer of onions on an open oyster.
- Squeeze a few drops of Fresh Lemon Juice on the oyster and onion. Only a little. You want the lemon to enhance the flavor of the oyster but not overwhelm the caviar.
- Cover onions with a spoonful of caviar.
- Cover caviar with a dollop of crème fraiche.
Voila a beautiful thing!
