INGREDIENTS:
- 4 – 1 1/2 pound lobsters cooked and meat removed and chopped (about 1 pound cooked meat)
- 1/2 cup good mayonaise
- 1/8 pepper
- pinch dry mustard
- pinch cayenne pepper
- 1/2 cup chopped celery
- 4- buttered and grilled New England-style hot dog rolls ( cut on the top with crustless sides)
- Kelley’s Paddlefish Caviar
PROCEDURE:
Assemble the cold lobster salad in the toasted roll and top with a generous amount of caviar.
