New England Lobster Roll & Caviar

INGREDIENTS:

  • 4 – 1 1/2 pound lobsters cooked and meat removed and chopped (about 1 pound cooked meat)
  • 1/2 cup good mayonaise
  • 1/8 pepper
  • pinch dry mustard
  • pinch cayenne pepper
  • 1/2 cup chopped celery
  • 4- buttered and grilled New England-style hot dog rolls ( cut on the top with crustless sides)
  • Kelley’s Paddlefish Caviar

PROCEDURE:
Assemble the cold lobster salad in the toasted roll and top with a generous amount of caviar.
